Select a State Dropdown

Is there a way to have select a state rather than having Alabama as the first state in the dropdown?

As crazy as it may sound.. I have some customers that are overlooking selecting a state and when we get the orders it has Alabama.

I'm also trying to figgure this as well as country. If I disable onepage there is no default country or state!

This is really frustrating.

How do I change state from Alabama like to --Select-- like the demo sites?
